Why It Matters

Most restaurants cut corners where you can't see them. Refined oils, processed sugars, pre-made sauces shipped in from who-knows-where. We chose a harder path because we care about what our community puts on their table. From the tallow we render to the reverse osmosis water we filter on-site, every decision is rooted in one question: is this something we'd feed our own family? If the answer isn't yes, it doesn't make the menu.
